Some can be taken as pills, some are powders. It’s a bit of a faff to ingest them all. Let me introduce you to one of my creations: the Ubermuffin. Breakfast Food of Champions, and half-arsed lefties.

One time I had a job that involved long hours and getting up early in the morning to commute. I didn’t have time for breakfast, and I wasn’t able to take my pills, etc, so I decided to combine the ones that would withstand heat (that is, not Vitamin C, for example) into one weekly-baked superfood.

Enter the Ubermuffin. You bake them, then take them out of the fridge, pop them in the microwave, and use some olive spread and/or Manuka honey and eat on the run. The 30 second breakfast.

Recipe:

(Note, these are guidelines – put in whatever you prefer). Preparation time, around 20 minutes but easily cut in half when you know what you are doing. This produces a slightly savoury muffin, but if you prefer sweeter, add more sweetener or sugar.

The base is wholemeal flour. With added dried or fresh fruit, and various other ingredients.

Makes 4-6 muffins.

100g wholemeal flour

50g mixed oats, rye flakes, coconut flour – I used to add a tsp of psyllium husks, but feel there is enough fibre in them now not to bother.

½ tsp potassium bicarbonate

½ tsp baking powder (or just use all baking powder= more baking powder gives you a lighter, fluffier muffin)

fresh blueberries

raisins or other dried fruit

1 tbsp yeast flakes (B vitamins)

3 1000mg calcium/magnesium tablets (crushed)

200 ml almond or oat drink or milk, or water, your preference.

1 free range egg.

Chia and sesame seeds.

Add 1 tbsp of rapeseed or MCT oil

Mix in a mixing bowl, pour the mixture into whatever baking containers you prefer. Ramekins, tart casings, anything will do.

Sprinkle nuts or seeds on top of the mixture and pop in the oven.

Bake for 15-20 mins at Gas Mark 5, 375ºF, 190ºC. If you want a crispy top, wait till they are set, spray them with oil and turn the heat up for five minutes at the end.

When cool they are ready to eat. They keep a few days in the fridge or you can freeze them and reheat in the microwave.

I take quite a lot of vitamins and other nutrients, insoluble fibre, MCT and omega 3-6s oils, CoQ10.
